Chez Panisse's kitchen is definitely focused on the quality of the ingredients. The cooking technique is not as fancy as some other top tier restaurants and this is done on purpose. The staff welcomes you to walk through the kitchen to check out what they are making that night or the following day. Be aware that the downstairs restaurant only serves a set menu for each night. The staff does try their best to accomodate people with dietary restrictions (such as substituting a course with something from the upstairs cafe menu) but you still may not be able to get what you want if you have very strict restrictions. Menus are published once a week for the following week and most likely you will have to make reservations in advance to the menu being published.

I recently dined at Chez Panisse Café and experienced firsthand how legendary Alice Waters and her staff use locally grown organic meat and produce to create mouth watering cuisine. Local food producers and farms are listed on the menu and the menu states “all our produce, meat, poultry, and fish come from farms, ranches, and fisheries guided by principles of sustainability.” The café opened in 1980 and offers a la carte menu which changes daily and has quite an extensive wine list. There were eight of us in our party, our waiter was very friendly and attentive; he offered to have the chiefs sign our Alice Water's cookbooks. The cafe has a very relaxed atmosphere, we weren't rushed with our dinner and stayed until after closing. I would highly recommend this restaurant, it is also a good idea to make a reservation in advance.

What else to say but YUM! For special occasions there is no place better. All the ingredients are as local as possible. They have even taken very active stands on offering city filtered water and their own bubbly b/c of the eco cost of shipping in Italian waters. The food is creative and delicious.
